Salt and pepper the stew meat.
Heat the olive oil in a large skillet. Add the cooked beef and brown the beef on all sides.
Remove the beef from the pan and add the red wine. Cook over medium-high heat, scraping the pan with a wooden spoon to loosen any browned bits.
Add the red wine mixture, seared beef, beef broth, tomato paste, onion, carrots, and potatoes to the slow cooker or crock pot. Mix until combined.
Top with fresh rosemary and bay leaf.

Vegetables to put in meat stew
We like to include onions, carrots, and potatoes in our beef stew to keep it simple and filling. I will often add 1 cup of frozen peas at the end, to give the gluten free beef stew more color and flavor my parents used to add in chopped celery and occasionally broccoli. This gluten-free beef stew is thick and filling. It's naturally grain- and dairy-free, and paleo for those who eat a paleo diet with potatoes. You can leave the potatoes out, but we think it's better with potatoes. You can also use sweet potatoes for a fun twist.
